    Yak butter tea is a daily staple dish throughout the Himalaya region and is usually made with yak butter, tea, salt and water churned into a froth. It is the "Tibetan national beverage" with Tibetans drinking upwards of sixty small cups a day for hydration and nutrition needed in cold high altitudes.       The Original Bulletproof Tea. Dating back to the 7th century, butter tea (po cha) was a daily ritual for many families in the Himalayan regions of Nepal, Bhutan, India, and most famously, Tibet. Each morning, workers in cold climates would be served a bowl of yak butter tea- made with black tea (pu erh), salt, yak milk, and yak butter.   Apparently the tea, if it is proper butter tea, is made with yak butter. And it involves a far more complex procedure than brewing a cuppa of Earl Grey at home. These days milk from the domesticated yak is generally used, because it is too troublesome to chase down a wild one and convince it to hand over some milk.

      So, the other day I tweeted that I was in possession of some Instant Yak Butter Tea. So, yak butter ’s a Tibetan thing. I’ve actually attempted to make something approximating it before, only with cow’s milk, since that was all I could get my hands on. I did have a cake of pu ehr, though, so I didn’t use Lipton (though to be honest if I hadn’t had the pu ehr I . Butter tea, known as Po cha in Tibet, is made from churning tea, salt and yak butter. The tea used is a particularly potent, smoky type of brick tea from Pemagul, Tibet. A portion of this brick tea is crumbled into water and boiled for hours to produce a smoky, bitter brew called chaku. This is then stored until used to make butter tea.
